2oz TX Whiskey
½oz Lime Juice
½oz Agave Nectar
Shake over ice and strain into a Yeti Lowball rimmed with Meat Church's The Gospel.

Crystal Clear Margarita
In a foodsafe tub or bowl mix:
Full bottle of blanco tequila
12 ½oz dry curacao
15oz fresh lime Juice
7 ½oz agave syrup
Heavy pinch of salt
Quickly stir then add:
10 ½oz whole milk
Let the mixture sit for an hour or so. The milk curdles will act as the filtration system.
Get a funnel with a couple damp paper towels as a filter.
Into a smaller container, pour a small amount of the mixture through the filter. During clarification the first bit will be cloudy. Set it aside to reintroduce back into the filter later.
Into a litre bottle, slowly filter the rest of the mixture until clear. Patience is key.
Serve in a lowball glass with ice. Express lime peel and serve.

Clarified Margarita
Basil Gimlet
5 large basil leaves
1 ½oz gin
¾oz fresh lime juice
½oz simple syrup
Put 4 basil leaves in a cocktail shaker and press them gently with a muddler or a wooden spoon.
Add the gin, lime juice and simple syrup.
Fill with ice, shake vigorously and strain into a chilled coupe or other small glass.
Garnish with the remaining basil leaf.

Tequila Mockingbird
1 slice jalapeño
3 watermelon cubes (each about 1 inch cubed)
2 ounces blanco tequila
¾ ounce lime juice, freshly squeezed
¾ ounce agave syrup
Muddle the jalapeño slice and watermelon cubes in a shaker to extract the juices.
Add tequila, lime juice, agave syrup and ice, and shake until well-chilled.
Fine-strain into a rocks glass over fresh ice.
